What light roast means
A light roast is taken out earlier, before the oils surface and before the roast flavours dominate. What you’re left with is the coffee’s own character — the fruit, florals, and acidity created by its origin, altitude, and process. It’s the roast specialty drinkers reach for when they want to taste the estate, not the roaster.
Why it tastes brighter
Lighter roasting keeps more of the coffee’s natural acidity, which reads as brightness and liveliness — think of the tang in fruit. That’s a feature, not a fault: it’s what makes a light-roast pour over taste vivid and complex rather than flat.
How to brew it
Light roasts are less soluble, so they suit methods that extract patiently and cleanly — pour over and AeroPress especially. Use water just off the boil and a slightly finer grind to coax out sweetness. They’re best enjoyed black, where nothing masks the detail.
