How to pull espresso

    Dose and distributeGrind about 18g fine into the portafilter basket, then level and distribute the grounds evenly.

    Pull the shotStart the machine and aim for about 36g of espresso out (a 1:2 ratio) in 25–30 seconds.

Getting the best espresso

Grind fine, and dial it in

Espresso needs a fine grind and a little tuning. Aim for about 36g out from an 18g dose in 25–30 seconds. If the shot runs fast and tastes sour, grind finer; if it runs slow and tastes bitter, grind coarser. Small adjustments make a big difference.

Choose the right roast

Medium roasts pull the most balanced espresso — sweet, full, and not too sharp. Our Bourbon Bliss and Monsoon Malabar AA both make excellent shots, and the Cappuccino Blend is built to shine under milk.

Rest fresh beans a few days

Very fresh coffee is full of CO₂, which can make espresso gush and taste gassy. A few days’ rest after roasting settles it. Our beans usually arrive ready to pull, but if a shot is unruly, give it a couple more days.

Crema and milk

Good crema comes from fresh beans and a well-dialled shot. For milk drinks, a bean with body — like our blends — cuts through steamed milk instead of disappearing into it.

Medium roasts are the sweet spot, giving balanced, sweet shots. Very dark roasts can taste bitter and very light ones sharp.

A fine grind, then fine-tuned to your machine. Adjust finer for sour, fast shots and coarser for bitter, slow ones.

A classic 1:2 — about 18g in, 36g out — in 25–30 seconds. Adjust to taste.

No, but a little Robusta adds body and crema — which is why our Cappuccino Blend includes some for milk drinks. Fresh Arabica also creates good crema.
