Choosing coffee for milk-based drinks
Body beats brightness
The single most important thing in a milk coffee is body. A light, bright, acidic coffee that tastes wonderful black often vanishes under steamed milk. A fuller-bodied, chocolatey coffee holds its ground and comes through in every sip. That’s why medium and darker roasts, and blends with a little Robusta, work so well.

Getting the espresso right
Most milk drinks start with espresso. Aim for a balanced 1:2 shot with good crema, then steam milk to a glossy microfoam — smooth and paint-like, not big bubbles — and pour. A bean with body makes this far more forgiving.
